Looking for a tasty appetizer for your next dinner party, look for further. These are the best air fryer potato wedges on a whipped feta dip. It’s so easy to make and it’s sure to be a crowd pleasure. It’s not only my favourite summer appetizer, it’s also perfect for game day!

Why Use an Air Fryer

If you love fried food, then you’ll love what an air fryer can do. A lot of people have turned to air fryers to replace deep-fried foods, which helps to contribute to healthy eating. The popular kitchen appliance works by circulating hot air around the food, therefore creating a crispy exterior with a little olive oil and some foods can even ‘fry’ without it. It’s a great way to cut back on grease and use less oil. Perfect for making air fryer french fries or even air fryer chicken.

      How to make Whipped Feta?

      To make this whipped feta recipe, all you need is some feta cheese, yogurt and a little olive oil. Throw it all in a blender or food processor and let it run for a few minutes until it’s light and fluffy. It’s a savory version of whipped cream and you’ll want to put it on EVERYTHING. This whipped feta dip has totally replaced cream cheese in a few of my recipes as well. 

      For this whipped feta recipe, it can be made in advance and stored in an airtight container and refrigerated until ready to serve. Keep it in an airtight container until then.

      Which potato is best for wedges

      I’ve found that Russet potatoes work best for making wedges or homemade fries. They tend to cook faster and always end up more crispy. If not, your second best is Yukon Gold. If you are a big fan of sweet potato fries, try using sweet potatoes.

      How to Cut Potato Wedges

      To make potato wedges start by selecting firm and medium-sized potatoes. Wash them thoroughly and pat them dry. With a sharp knife, cut each potato in half lengthwise. Then, place the cut side of each half on the cutting board and slice it again lengthwise to create quarters. For larger potatoes, you can cut them into eighths for larger wedges. The goal is to achieve uniformly thick pieces to ensure even cooking.

      The secret to making Wedges extra crispy

      To achieve extra crispy air-fried potato wedges in an air fryer, here are a few tips and tricks:

      1. Soak the potato wedges: After cutting the potatoes into wedges, soak them in cold water for about 30 minutes. This helps remove excess starch, resulting in crispier wedges.

      2. Dry thoroughly: Once soaked, remove the wedges from the water and pat them dry with a clean kitchen towel or paper towel. Ensuring they are completely dry helps prevent sogginess and promotes crispiness.

      3. Preheat the air fryer: Preheating the air fryer before adding the wedges can help create a hot and consistent cooking environment. This contributes to better browning and crispiness. Follow the manufacturer’s instructions for preheating.

      4. Use a little oil: Lightly coat the potato wedges with oil. You can use a cooking spray or toss them in a small amount of oil to evenly coat the surfaces. Oil helps in achieving a crispy exterior.

      5. Seasoning and spices: Season the wedges with salt and any desired spices or herbs before air frying. This adds flavor and enhances the overall taste of the crispy wedges.

      6. Arrange in a single layer: Place the potato wedges in a single layer in the air fryer basket or tray. Crowding the basket can result in uneven cooking and less crispy results. Consider air frying in batches if needed.

      7. Shake or flip halfway: About halfway through the cooking time, carefully shake the basket or flip the wedges using tongs. This helps ensure even cooking and browning on all sides.

      8. Adjust temperature and time: Every air fryer model is different, so follow the recommended cooking temperature and time for potato wedges. However, if you prefer them extra crispy, you can increase the temperature slightly or extend the cooking time by a few minutes. Keep a close eye on them to prevent burning.

      Potato Wedges Seasoning

      For this recipe, we are using simple pantry staple items. You probably have most of them already in your pantry, and if not they are easily found at your local grocery store. You’ll need dried basil, dried oregano, garlic powder, salt and black pepper.

      You can also swap or add any other of your favourite dried herbs, like dried dill, thyme or dried parsley. Add a little extra flavour by adding a dash of paprika or smoked paprika for an extra layer of flavour. 

      Ingredients for Air Fryer Potato Wedges

      • 3 Russet potatoes, cut into wedges
      • 3 tbsp of olive oil
      • 2 tsp of dried oregano
      • 2 tsp of dried basil
      • 1 tsp of garlic powder or 2 fresh garlic cloves, minced
      • 1 teaspoon salt
      • black pepper to taste
      • juice and zest of 1/2 a lemon
      • 8 oz of feta cheese
      • 1 cup of plain Greek yogurt

      How to Make Potato Wedges

      1. In a large bowl; add your potato wedges, dried basil, oregano, salt, a few cracks of fresh black pepper, lemon juice and 2 tbsp of olive oil. Toss to ensure all potato wedges are covered in the mixture.
      2. Add the potato wedges to the basket or baking tray of your air fryer in a single layer. Do not overcrowd if you want crispy potatoes, this means you might have to work in batches or increase the cooking time. 
      3. Cook at 400 degrees F for 15 minutes, shaking the basket every 5 minutes. Depending on the thickness of your wedges, you can cook for an additional 5 minutes at the same temperature until the edges are perfectly crispy.

      How to Make Whipped Feta

      1. While potatoes are frying, crumble the feta cheese and place it into the bottom of a blender or food processor, add in the yogurt, then the remaining 1 tbsp of olive oil.
      2. Blend for about 5 minutes until light and fluffy. You might need to stop halfway to scrape down the sides.
      3. To serve, add the whipped feta to the bottom of a serving dish and place the crispy potato wedges on top. Sprinkle it with a little lemon zest and serve immediately.

      You can also add some fresh herbs for a little extra flavor (like basil or dill), freshly grated parmesan or eve a drizzle of local honey.

      How to Store Potato Wedges

      To store air-fried potato wedges, follow these steps:

      1. Allow the potato wedges to cool completely at room temperature before storing them. This will help prevent moisture buildup and maintain their crispiness.

      2. Transfer the cooled wedges to an airtight container or a resealable plastic bag. Ensure that the container or bag is clean and dry to prevent any moisture from getting in.

      3. If you have a large number of wedges, it’s a good idea to separate them into single layers using parchment paper or aluminum foil to prevent them from sticking together.

      4. Place the container or bag of potato wedges in the refrigerator. This will help to keep them fresh for a longer period.

      5. When you’re ready to enjoy the leftovers, preheat your oven or air fryer to a high temperature. Spread the wedges out on a baking sheet or in the air fryer basket, and reheat them until they are hot and crispy again. This step will help revive their texture and taste.

      Important Note

      While potato wedges are best enjoyed fresh, storing them in the refrigerator may cause them to lose some of their crispiness. Reheating them in the oven or air fryer can help restore some of the original texture.

      Can You Freeze Potato Wedges

      Yes, you can freeze leftover potato wedges to extend their shelf life. Here’s how you can freeze them:

      1. After air frying the potato wedges, allow them to cool completely at room temperature.

      2. Once cooled, transfer the wedges to a baking sheet lined with parchment paper or a silicone mat. Make sure the wedges are placed in a single layer, without touching each other.

      3. Place the baking sheet in the freezer and let the potato wedges freeze for a few hours or until they are firm and solid.

      4. Once frozen, transfer the wedges into airtight freezer-safe containers or resealable freezer bags. Label the containers or bags with the date for future reference.

      5. Return the containers or bags to the freezer. It’s best to use the frozen potato wedges within 2 to 3 months for optimal taste and texture.

      When you’re ready to enjoy the frozen potato wedges

      1. Preheat your oven or air fryer to a high temperature.

      2. Spread the frozen wedges in a single layer on a baking sheet or in the air fryer basket.

      3. Bake or air fry the wedges until they are heated through and crispy, turning them halfway through to ensure even cooking.

      4. Once heated, remove the potato wedges from the oven or air fryer and season them with salt or any desired spices.

      Remember that freezing and reheating the potato wedges may cause them to lose some of their initial crispiness, but they should still be flavorful and enjoyable.
