How to make simple syrup

Simple Syrup is a must-have when creating summer cocktails. I always make a batch every few weeks and keep it in the fridge in a sealed air-tight bottle or glass jar. Your simple syrup will last 3-4 weeks if properly stored.

Making simple syrup is as easy as adding equal parts water and sugar into a small saucepan. One cup water and one cup sugar should make plenty. Add both to a small pot and heat on medium-high heat until all sugar has melted. I often will also just leave it on medium heat and come back to it in about 5-7 minutes and it’s ready. Allow to cool completely and transfer to a bottle before using.

Here is what you’ll need to make this easy lime cocktail…

  • 1 oz of blanco Tequila
  • 1/2 oz of simple syrup (see directions above)
  • 2 lime wedges
  • soda water to top up
  • slice of lime for garnish
  • handful of ice

Here is what to do if you want to rim your cocktail glasses…

Rimming a cocktail glass is always a nice extra touch when serving your guests. For this cocktail, you can rim it with coarse salt or sugar. To do so, simply take a lime wedge and run it along the rim of your glass. Dip your glass into sugar or kosher salt and allow the excess to fall. Set aside until you are ready to serve the cocktail.

How to make this easy cocktail!

  1. In a cocktail shaker, add a handful of fresh ice, tequila blanco, and simple syrup. Squeeze the juices out of the lime wedges and add to the cocktail shaker. Shake for about 10 seconds.
  2. Pour tequila mixture into a rocks glass and top with soda water.
  3. Garnish with a lime wheel and enjoy.

If you are looking for a smooth cocktail without pulp, feel free to double strain using a fine mesh strainer.

Do I have to use a rocks glass?

Nope, you can use any glass you like. This cocktail looks great in a wine glass, collins glass or highball glass.

What kind of other additional garnishes can I use?

I love adding a mint sprig, or cucumber slices, basil sprigs or dried lime slices.

Simply replace with agave syrup or agave nectar.
