It’s one of my favourite things to cook during the summer months, and I’m always on the lookout for great ideas to change up the flavours.

Ingredients Needed for this Marinated Turkey Breasts Recipe

  • 1 Turkey Breast (0.36 kg)
  • Juice of 1 lemon
  • ¼ cup of olive oil or vegetable oil
  • 1 tbsp of lemon zest
  • 1 tsp of chili powder
  • 1 tsp of onion powder
  • 1 tsp of dried oregano
  • 1 tsp of smoked paprika
  • ½ tsp of cayenne pepper
  • 2 garlic cloves, minced
  • Salt and pepper
  • Fresh herbs, I used rosemary & thyme

For the sides

Directions

  1. In a small bowl, combine all of the ingredients for the marinade. Whisk to get all of the ingredients well combined.
  2. Butterfly the turkey breast. Use a sharp knife and slice the turkey breast lengthwise in half. You can also purchase Turkey Breast Scallopine at the grocery store too!
  3. Transfer the turkey breast into a shallow dish and pour the marinade over it. Ensure the turkey breast is completely covered in the mixture. You can also pour all of the contents into a resealable plastic bag.
  4. Marinate for at least two hours in the fridge before grilling. For best results, prepare and marinate 24h in advance for maximum flavour.
  5. When ready to grill, prepare the vegetables by roughly chopping the shallots, pepper and broccoli on a cutting board. Add to a large bowl and toss with olive oil.
  6. Preheat the BBQ to 400 degrees f. On a large piece of aluminum foil, add the chopped veggies to the middle and add the marinated turkey breasts on top.
  7. Fold up the aluminum foil to create a tent and place the wrapped turkey on the grill and close lid.
  8. Cook for 30 minutes. Test the thickest part of the breast to reach a minimum internal temperature of 160 degrees Fahrenheit on a meat thermometer or instant read thermometer.
  9. Add the cooked veggies and cooked turkey on white rice and serve.
