Some of my favourite ingredients include arugula, prosciutto, garlic butter and camembert cheese…so why not add all of these into a delicious sandwich.

This recipe is for one sandwich.

INGREDIENTS:

  • 1 small french baguette

  • 4 slices of prosciutto

  • Camembert cheese

  • handful of arugula

  • 1 tbsp of olive oil

  • pinch of sea salt

  • Camembert cheese

  • Caramelized Garlic Butter (recipe here)

DIRECTIONS:

  1. Slice your baguette in half lengthwise and use the broil function on your stove or toaster oven for about 3 minutes. Just until it warms up the bread and the edges start to turn golden.

  2. In the meantime, add your handful of arugula in a small mixing bowl with your olive oil and pinch of sea salt. Toss to combine.

  3. Once removed from the oven, spread some of the Caramelized Garlic Butter on each half of your bread.

  4. Place your slices of prosciutto on the bottom half. Add a layer of the arugula mixture and top with a few slices of camembert cheese.

  5. Add the top slice of the baguette and slice it in half.

  6. Serve!

This is a perfect sandwich to bring for lunch at work since it can be made ahead. Just keep the arugula mixture separate and add it when ready to eat.

This is also a perfect dinner sandwich that can be served with some homemade fries or side salad. This sandwich paired perfectly with the Okanagan White from City & Country Wine since it is perfectly balanced between fruity and acidic. With notes of apples and pears, this wine has undertones of tropical fruit and a buttery finish. This is also a perfect wine to sip on on its own.
