For the jalapeño pepper, I used pickled jalapeños for connivance. If you prefer buying a fresh pepper, look for a firm, bright green color—a hint of its crisp texture and vibrant heat.
Ingredients
- 2 cups of diced tomatoes
- 1 cup of diced strawberries
- 1 minced shallot,
- 1/4 cup of chopped pickled jalapeño (add more or less depending on your preferred spice level)
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh mint
- 1 tbsp of honey
- juice and zest of 1 lime
