With Thanksgiving coming up, it’s always when I transition to cozy winter cooking. Our bodies start to crave heavier and more hearty dishes to help us get through the winter…and some of my favourite recipes are made this time of year. Especially childhood favourites.

I’ve partnered up with Smak Dab Gourmet Mustard to bring you 3 easy and cozy side dishes that will pair perfectly with almost any meal this Fall and Winter season.

I recently discovered Smak Dab Mustards and I am so happy I did. They are Canadian, made in Winnipeg and have unique and fabulous flavours. They also use a lot of local ingredients, which I love. For example; for this recipe, I used the Hot Honey Jalapeño. The honey used in this mustard is local (from Manitoba). Other favourite flavours are the Curry Dijon, Beer Chipotle and their seasonal; Cranberry Wine (which I will be using also for a delicious salad in an upcoming post).

INGREDIENTS:

  • 2 lbs of carrots, scrubbed

  • 2 tbsp of olive oil

  • 1/4 cup of maple syrup

  • 2 tbsp of Smak Dab’s Hot Honey Jalapeño Mustard

  • 1 tbsp of White Wine Vinegar

  • 1 garlic clove, minced

  • salt & pepper to taste

DIRECTIONS:

  1. Preheat your oven to 400F.

  2. In a small bowl, mix your maple syrup, mustard, minced garlic, oil, salt, pepper and White Wine Vinegar.

  3. Toss your carrots with half of the mixture and arrange in a single layer on a baking sheet and roast for 25 minutes.

  4. Pull out from the oven and turn your carrots, brush with more of the mixture and return to the oven for an additional 10 minutes (or until tender and ends turning golden brown).

  5. Remove from the oven, drizzle with any remaining maple and mustard mixture and serve.
