Preheat your grill to medium-high heat.
On a cutting board, cut your watermelon into 2-inch-thick slices.
Place watermelon slices between two pieces of paper towel to absorb some of the water content.
Brush the top and bottom of your watermelon slices with olive oil, and season with a bit of salt and pepper.
Add to the hot grill and grill watermelon on each side for 3-4 minutes, or until you have the perfect grill marks.
Plate your watermelon, sprinkle some feta cheese, chopped mint, and almonds.
Drizzle each plate with honey and a very light drizzle of olive oil. Serve immediately.
