Grilled Watermelon Salad with Mint and Feta

Ingredients
  

  • a few slices of watermelon three to four slices per person
  • 1/2 cup of feta cheese crumbled
  • 1/4 cup of fresh mint chopped
  • 1 tbsp of olive oil
  • 1/4 cup of chopped almonds
  • 2 tbsp of honey
  • pinch of salt & pepper

Instructions
 

  • Preheat your grill to medium-high heat.
  • On a cutting board, cut your watermelon into 2-inch-thick slices.
  • Place watermelon slices between two pieces of paper towel to absorb some of the water content.
  • Brush the top and bottom of your watermelon slices with olive oil, and season with a bit of salt and pepper.
  • Add to the hot grill and grill watermelon on each side for 3-4 minutes, or until you have the perfect grill marks.
  • Plate your watermelon, sprinkle some feta cheese, chopped mint, and almonds.
  • Drizzle each plate with honey and a very light drizzle of olive oil. Serve immediately.
