The perfect weeknight pan meal; convenient and so delicious. This dish is just that and the best part…all you need is a few pantry staples.


You start by searing your chicken breasts, throwing together the sauce and letting it simmer until it’s juicy and full of flavour.

INGREDIENTS:

  • 2-4 chicken breasts

  • salt & pepper

  • 2 tbsp of olive oil

  • 1 can of crushed tomatoes

  • 1 small onion, diced

  • 4 garlic cloves, roughly chopped

  • 1 tbsp of brown sugar

  • a handful of fresh basil, chopped + extra for garnish

DIRECTIONS:

  1. In a medium-sized skillet, add 1 tbsp of oil and turn heat to medium-high.

  2. Season both sides of the chicken breasts with salt and pepper, then add to the hot pan. Sear each side for about 4 minutes (or until brown and crispy).

  3. Once both sides are seared, remove from the pan and turn the heat down to medium.

  4. Add the rest of the olive oil with the diced onions. Cook for 2-3 minutes and then add the chopped garlic. Cook until onions are soft.

  5. Once soft, add in the can of crushed tomatoes, brown sugar and fresh basil. Stir to combine.

  6. Return the chicken to the skillet and spoon some of the mixtures on top until well coated.

  7. Cover and simmer on medium-low heat for 15-20, or until chicken is completely cooked through.
