I wanted to share this simple recipe because it’s another example of how quick & delicious a simple pasta dish can be. The main ingredients for this recipe are garlic (lots of it) and olive oil. Now there are a ton of variations of this dish since it is a classic Italian dish originating from Naples, mainly known to be made with Spaghetti. So if you don’t have linguine, then spaghetti is the perfect substitution.

The key to getting the best flavour for this dish is to cook the garlic longer at a lower temperature to avoid it burning. You want all the flavour released because you won’t get that sweetness from the garlic and can become bitter if it burns…even slightly.

INGREDIENTS:

  • 1 lb of pasta (454g)

  • 6 cloves of garlic, minced

  • 1/2 cup of good quality olive oil

  • 1 cup of parmesan cheese, grated

  • 1/4 tsp of red pepper flakes

  • salt & pepper to taste

  • 1/4 of fresh basil

DIRECTIONS:

  1. Bring a large pot of water to a boil. Add a few pinches of salt.

  2. Cook your pasta according to the directions on the box for al dente.

  3. Reserve 1/2 cup of pasta water before draining. Return to pot and set aside.

  4. Add your oil to the bottom of a skillet and turn up to medium heat to slowly cook your minced garlic in the oil. Cook for 8 minutes. Once your oil is starting to bubble, reduce heat to medium-low.

  5. Stir often until your garlic turns golden brown. Remove from heat.

  6. Add your red pepper flakes, salt and pepper to your pasta. Then slowly pour the oil mixture into your pot of pasta. Sir well. Add a few splashes of the pasta water if pasta is sticky.

  7. Add one cup of the parmesan cheese to your pasta and stir again until creamy.

  8. Serve your pasta with an extra sprinkle of parmesan cheese and garnish with a few pieces of fresh basil.
