Even though we are finally seeing Spring weather, sometimes I still crave a cozy roast dinner. This Roasted Grape and Chicken Skillet is the perfect example of a rustic dish with a seasonal twist.
The chicken breasts are tucked in with garlic cloves, onion, thyme and grapes for maximum flavour.
The grapes also help make for the juiciest chicken since the liquid accumulates from the roasting process and helps tenderize; as well as keep the chicken moist. The juices are also the perfect gravy to spoon right on top before serving.
This chicken skillet pairs perfectly with a side of roasted veggies, mashed potatoes or a side salad. This recipe serves 2, but can easily be doubled if needed.
INGREDIENTS:

2 chicken breasts

1 tbsp of olive oil

4 garlic cloves, halved

1 tbsp of balsamic vinegar

1 small onion, cut into wedges

seedless red grapes
-
fresh thyme
-
salt & pepper to taste
DIRECTIONS:

In an oven-proof pan, heat oil on medium-high heat. Add your garlic and cook for 1 minute, to flavour the oil.

Season each side of the chicken breasts generously with salt and pepper.

Preheat the oven to 400F.

Place the chicken on the skillet and sear the top of the chicken breast for 5-6 minutes.

Turn the breast over and tuck in the grapes and onion wedges.

Drizzle with the balsamic vinegar and sprinkle with some fresh thyme.

Place in oven for 15-20 minutes, or until the center is no longer pink.
I like to serve this family-style and place the skillet in the middle of the table. Then, just dig in!
