Sometimes I just want a little no-fuss dessert after dinner, and this recipe is just that. To be honest, we aren’t a dessert household. We don’t often have cookies or cakes on hand, mostly when hosting friends over for dinner. Although from time to time after a delicious meal, I just want something sweet to wrap up dinner.
This dessert can be thrown together easily and you can have the apples roasting while you are eating your main dish. That way, it’s warm right out of the oven. Perfect on ice cream…but also yogurt or even your morning oatmeal.
This recipe makes two servings.
INGREDIENTS:

1 large apple, diced

1 tsp of vanilla extract

2 tbsp of maple syrup

1 tbsp of butter, cut into small chunks
DIRECTIONS:

Preheat your oven (or toaster oven like I use) to 450 F.

In a baking dish, combine the diced apples, vanilla, maple syrup and toss to get the apples well coated.

Spread the apples in an even layer and add scatter the pieces of butter on top.

Bake for 40-45 (stirring halfway through) until the apples are soft and the edges start to turn golden.
Allow to cool for 5 minutes and serve. This will keep 2-3 days in an airtight container, refrigerated.
