It’s currently peak peach season, and this Peach Galette is an absolute favourite of mine.

I love making galettes because they are so fast and quite easy to prepare. Especially if you use pre-made puff pastry, as I did here. I usually pride myself on making everything from scratch, but puff pastry or pie pasty is where I like to cut corners. I always keep some in the freezer and it’s a lifesaver. It’s so practical to whip up a dessert like this or to make super easy appetizers.

I love to eat this dessert as is, especially right out of the oven. Feel free to add whipped cream or ice cream on top. It’s the perfect treat to celebrate those last few days of summer.

INGREDIENTS:

  • 1 roll of puff pastry

  • 4 peaches

  • 1 tbsp of cornstarch

  • 2 tbsp of lemon juice

  • 1 tsp of lemon zest

  • 1 tbsp of vanilla

  • 1/4 cup of sugar

  • 1 pinch of salt

  • 1 egg yolk

  • 2 tbsp of water

DIRECTIONS:

  1. Slice the peaches into wedges (about 1/4 inch thick) and place them into a bowl with the lemon juice, zest, vanilla, sugar, salt and cornstarch. Toss to mix and let sit for about 5 minutes.

  2. Dust your work surface lightly with flour and roll out the puff pastry into a disk. Transfer onto a baking mat or parchment paper.

  3. Place your peach mixture in the middle, leaving 2-3 inches around the border.

  4. Fold over the pie edges to create a crust. Place onto a baking sheet and refrigerate for at least 15 minutes.

  5. Preheat the oven to 400 F while the galette is cooling in the fridge.

  6. Mix your egg yolk and 2 tablespoons of water and brush the top of your galette.

  7. Bake for 35 minutes, or until the crust starts turning golden brown.

  8. Serve warm or at room temperature.
