Who doesn’t like a piece of classic banana bread? Sometimes it’s so nice to add a twist on a classic, just like I did here. The spices that I decided to add are classic spices for winter baking, and my kitchen smelt incredible and the house felt so cozy while it was baking.
I also decided to try something new and use yogurt in my banana bread recipe, and it worked out perfectly. It was so moist, and the best part of all it stayed moist until the loaf was finished.
INGREDIENTS:
-
3 ripe bananas
-
1/4 cup of butter, softened
-
1/2 cup of brown sugar
-
2 eggs at room temperature
-
1/2 cup of Greek yogurt
-
2 cups of flour
-
1 tsp of vanilla
-
1 tsp of baking soda
-
1/2 tsp of ground cinnamon
-
1/2 tsp of cardamom
-
1/2 tsp of nutmeg
-
1/2 tsp of Allspice
DIRECTIONS:
-
Preheat oven to 350F and grease your loaf pan with butter or oil.
-
In a large bowl, cream together the butter and brown sugar.
-
Mix in the eggs, yogurt, vanilla, bananas and mix well.
-
Stir in the dry ingredients (including spices) and mix until well combined.
-
Pour the mixture into the pan and bake for 35-40 minutes (or until a toothpick comes out clean from the middle in the loaf when inserted).
-
Let cool for about 10 minutes before flipping the loaf to release it from the baking pan.
-
Slice and serve.
This can easily be popped into a toaster oven for a few minutes to reheat…even for a delicious breakfast!
