Perfect for the whole family, and the best thing about this waffle sandwich is that you can customizable it with whatever fillings you want. Variations of these waffle sandwiches have become a Sunday brunch favourite with friends, and I love serving them because they are so simple to make. As I mentioned, this recipe is super customizable, so I included a list of easy variations further down.

 

Let’s talk about wheat…

First things first, Canada is one of the top producers of wheat and most of it is sent abroad. It goes to our neighbours in the United States, but it also goes to Indonesia, Bangladesh and Peru. Most surprisingly, it gets sent to Italy! That’s right, the pasta capital of the world. 700,000 tons of wheat have been explored each year (for the past three years).

For these waffle sandwiches, I chose to go with whole wheat flour…so let’s explore that for a minute. Whole wheat is a great source of protein and a variety of other vitamins and minerals (like zinc and potassium). In a world where we talk about gut health so frequently, it’s also important to know that wheat is a beneficial ingredient and it essential to our diets. Fibre keeps us regular. In addition, it also keeps us feeling full longer and fuels us for our busy day-to-day lives. Not to mention wheat is such an affordable ingredient and is so versatile. You can incorporate whole grain flour or whole wheat flour in so many dishes from so many different cuisines. In short, it really is one of the most important pantry stables and a key ingredient in making good food.

How to make my favourite waffles…

There is just something about making a batch of waffles on a Saturday or Sunday morning that just takes me back to being a kid. Growing up, making waffles was one of my favourite food items to make. I have been using this same recipe for years, so I am so excited to share it. They worked perfectly for these waffle sandwiches since they are light, fluffy, and are a perfect addition to a healthy breakfast.

Ingredients you’ll need…

  • 1 cup of plain Greek yogurt

  • 1/4 cup of sugar

  • 1 tsp of vanilla

  • 4 eggs

  • 1 cup of milk (non-dairy alternatives work great too)

  • 1 tbsp of lemon juice

  • 1 tbsp of lemon zest

  • 1/4 cup of melted butter

  • 2 cups of whole wheat flour

  • 2 tsp of baking powder

  • 1/2 tsp of baking soda

  • pinch of salt

  • 1 tablespoon vegetable oil

Directions and tips…

  1. Preheat your waffle maker. I like my waffles golden brown, so I usually turn it to medium heat or medium high (depending on the settings).

  2. Meanwhile in a small bowl, combine the whole wheat flour, baking powder, baking soda and a pinch of salt. Set aside.

  3. In a medium bowl, add the yogurt, sugar, vanilla, 4 beaten eggs, milk, melted butter, lemon juice and lemon zest. Using a stand or hand held mixer, mix until all the wet ingredients are well incorporated.

  4. After that, gradually add in the dry ingredients until your batter is smooth.

    TIP: Before adding the batter to your waffle maker, add a little vegetable oil to a shallow bowl and use a basting brush to grease the waffle iron to prevent any sticking.

  5. Add 1/4 cup of batter into the centre of the waffle iron and close.

  6. Once the waffle is ready, set aside and repeat with the remaining waffle batter.

How to assemble the waffle sandwiches…

The best thing about making these waffle sandwiches is that you can actually prepare all your waffles in advance. If you are hosting friends for brunch, it is so much easier to just assemble when you are ready to serve instead of stressing to get all the waffles made.

When ready, pop your waffles into the toaster or toaster oven. You’ll want to toast them for a minute to a minute and a half…just enough to get them crispy.

Cut your waffles in half and spread some goat cheese on the bottom half. Then add a handful of arugula, a slice or two of prosciutto and a generous amount of raspberry jam. Add the top waffle and serve these waffle sandwiches are soon as they are assembled.

 

Easy recipe variations for waffle sandwiches…

  • BBQ Chicken: BBQ Sauce, a few slices of cheddar cheese, some greens (like spring mix or romaine lettuce) and shredded chicken breast.

  • Bacon & Eggs: mayonnaise, slices of bacon, fried egg

  • Sausage Breakfast sandwich: sausage patty, lettuce, tomato, hot sauce, black pepper

  • Cheese & Bacon: gouda cheese, bacon slices, pure maple syrup
