This is one of the easiest snacks/appetizers I make and will make you feel like you ordered a starter from a fancy restaurant. You can prepare this in advance, so you can simply take it out of the fridge when you are ready to serve. If you have some time, I would recommend marinating overnight as it will have more flavour.

You can serve this Herbed Goat Cheese with homemade crostini, or using your favourite crackers. This is the perfect addition to a wine night, served alongside a charcuterie board or a simple green salad.

I also wanted to share a kitchen hack with you. If you have ever tried to slice a log of goat cheese, you know how frustrating it is the get perfect slices. I learnt that you can use fishing wire to slice them without it getting it all stuck to the knife. I use dental floss and it works perfectly!

This recipe is as easy as chopping up some fresh herbs, slicing some goat cheese and drizzling some delicious olive oil on top. I suggest using a good quality oil since you want this to be decadent. You can even play around with some flavoured olive oil to kick it up a notch. You don’t want to waste any of this, so I encourage you to also use the oil as a dip for bread.

Once you are done with the cheese, save some of that yummy infused oil and use it as a salad dressing. It will be one of the most luxurious dressings you’ve ever had.

INGREDIENTS

  • 8 oz of goat cheese, sliced

  • good quality extra virgin olive oil (you will need enough to fill up your dish)

  • 3-4 sprigs of fresh rosemary, chopped

  • 1/2 tsp of red pepper flakes

  • 1/2 tsp of salt

  • 1 tablespoon of peppercorns

DIRECTIONS

Drizzle enough olive oil to fill the bottom of your container (I used a glass storage container with a snap-on lid). Add a layer of your sliced goat cheese and sprinkle some of the salt, chopped rosemary and red pepper flakes. Drizzle a little more olive oil and repeat with rest the cheese, rosemary and red pepper flakes.

Cover and put in the fridge for at least 1 hour but would suggest at least 12h. I always make this a day ahead.

This is going to wow your taste buds as well as your guests. Just spread on a cracker or crostini, drizzle some of the oil on top and enjoy!
