I love having these little energy balls ready to go when I’m running out the door and need a little snack. They freeze so well and I tend to make these guys regularly in the summer. They are always great to have on hand when going for a bike ride, hike or road trip.
I decided to give my recipe a seasonal twist and use some ‘festive’ ingredients. These turned out great, especially when you use local peanut butter and honey.
This recipe makes 10 balls. Double recipe if needed.
INGREDIENTS:

1 cup of quick-cooking rolled oats

1/2 cup of shredded coconut

1/4 cup of pecans, roughly chopped

1/2 cup of dried cranberries, roughly chopped

1/4 cup of peanut butter

1/4 cup of honey

1 tsp of cinnamon and/or nutmeg (optional)
DIRECTIONS:

Add all of your ingredients to a large bowl and mix until well combined.

Roll into bite-sized balls with your hands.
These will last 1 week in an airtight container at either room temperature or in the refrigerator. You can also freeze them for up to 4 months.
