One of my favourite scents in the kitchen is onions caramelizing. It smells so delicious and comforting to me. If you caramelize them right, they have such a decadent flavour and will easily elevate a simple dish.

This isn’t the same as fried onions, this is caramelized. It means the onions were cooked down at a low temperature for longer. It requires more time and patience, but trust me; it is well worth it.

This is a simple appetizer to serve and it’s so good…perfect for heading into the Holiday season. If you have been following my recipes, you know that I love cheese. What do I love more than that? Cheese on crostini.

I have a simple crostini recipe which you can find at the bottom of this post. It has been my go-to for years and only takes about 15 minutes to make.

This Onion Confit can also be added to so many dishes. Add some on top of steak, chicken breasts, add a tablespoon or two to soups, or sauté some with vegetables. My favourite is on a fresh baguette with nica e glass of wine. Perfection.

INGREDIENTS:


  • 3 tbsp of butter

  • 1 tbsp of olive oil

  • 1 red onion

  • 1 sweet onion

  • 1 white onion

  • 2 tbsp of coarse sea salt

  • 1 tsp of fresh cracked pepper

  • 1 tbsp of sugar

DIRECTIONS:

  1. Slice all three onions and set them aside.

  2. In a large frying pan or sauté pan, heat the butter and oil on medium-high heat.

  3. Once butter is melted, add the onions, salt, pepper and sugar. Mix well so that all of the ingredients are combined.

  4. Cook on medium-high heat for about 10 minutes, or until all the onions are soft. Keep stirring frequently.

  5. Turn down heat to low and keep cooking for 45 minutes, again…stirring frequently is key.

Once onions are golden brown, they are ready. Once cooled slightly, store in a jar and refrigerate for up to 10 days.
