Orange and Cranberry is quite possibly my favourite flavour combination (after orange and chocolate) and was craving these muffins recently. If ever you have had these muffins from a certain fast-food chain, you know exactly what I am talking about. I decided to give it a go and bake them myself since I haven’t eaten there in years.
I used the same muffin recipe that I have for blueberries and it worked out perfectly. Just added some orange zest, orange juice and some cranberries. So easy!
Since you are using the zest of an orange, I used the juice of 1 orange for this recipe. For convenience, you can always use 1/3 cup of orange juice. I also only recommend using fresh or frozen cranberries. I used frozen here and do not recommend using dried cranberries.
This recipe makes 12 muffins.
INGREDIENTS:

8 tbsp of butter, at room temperature

1 cup of sugar

1/3 cup of brown sugar

1 tbsp of vanilla

1 tbsp of orange zest
-
1/2 tsp of ground cardamom
-
1/2 tsp of nutmeg

2 eggs, at room temperature

3 cups of flour
-
1 tbsp of baking powder
-
1/2 tsp of salt
-
1/3 cup of orange juice (juice of 1 orange)

1 cup of greek yogurt
-
3/4 cup of fresh or frozen cranberries
DIRECTIONS:

Preheat your oven to 400 and either grease your muffin pan or use paper liners.

In a large bowl, add the flour, baking powder, salt and both spices. Mix to combine.

In another large bowl or bowl of a stand mixer, cream together the butter and sugars. Add the vanilla and then orange zest. Mix until well combined and fluffy.

Add in the eggs…one at a time and keep mixing.

Gradually add in half of your dry ingredients, then your yogurt and then the rest of your flour mixture. Keep mixing until all the ingredients are well combined.

Add in the orange juice and mix again.

Fold in your cranberries until all combined.

Separate your batter equally into your prepared muffin tins.

Bake for 25 minutes or until the tops of the muffins start to turn golden.
