Easy Black Bean, Cucumber and Feta Salad

Ingredients
  

  • 1 can of black beans drained and rinsed
  • 1 cucumber chopped
  • 1/2 red onion thinly sliced
  • 1 red pepper diced
  • 1/2 cup of feta cheese crumbled
  • lime wedges for garnish
For the Zesty Lime Dressing...
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1/2 tsp ground cumin
  • 1/8 tsp garlic powder
  • 1/8 tsp onion powder
  • 1/4 tsp salt
  • fresh pepper to taste

Method
 

  1. Start by rinsing and draining the black beans and add beans to a large bowl.
  2. Add the chopped cucumber, sliced onion, diced red pepper and crumbled feta cheese.
  3. In a small bowl, combine the olive oil, lime juice, cumin, garlic and onion powder, teaspoon salt and pepper. Whisk to combine.
  4. Pour the lime dressing into the large bowl and mix to get everything well mixed.
