Method
- Start by rinsing and draining the black beans and add beans to a large bowl.
- Add the chopped cucumber, sliced onion, diced red pepper and crumbled feta cheese.
- In a small bowl, combine the olive oil, lime juice, cumin, garlic and onion powder, teaspoon salt and pepper. Whisk to combine.
- Pour the lime dressing into the large bowl and mix to get everything well mixed.
