- In a large pot, heat your oil on medium high heat. Add your onions, garlic and carrots until soft (about 5-6 minutes).
- Add in your cans of tomatoes and break up the whole tomatoes with a wooden spoon. If you like more of a rustic sauce, you can leave it chunky. But it you want a smoother sauce, break up the tomatoes as much as you can.
- Stir in the remaining of your ingredients and mix well. Let the sauce simmer on reduced heat for about 20-25 minutes, stirring every few minutes.
