Bacon, Cheddar & Chive Scones

Ingredients
  

  • 2 + 3/4 cups of flour
  • 2 tsp baking powder
  • 1/3 cup of sugar
  • 1/2 tsp of salt
  • 1/2 tsp of baking soda
  • 4 oz of cold butter
  • 1 egg
  • 2 tbsp of heavy cream
  • 1/2 cup of milk
  • 1 cup of cooked bacon roughly chopped
  • 1 cup of sharp cheddar cheese
  • 1 handful of fresh chives chopped

Instructions
 

  • Preheat oven to 400°F and line a baking sheet with parchment paper, wax paper or use a baking mat.
  • In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and sugar. Mix to combine the dry mixture.
  • Cut your butter into small chunks and then using your hands or wooden spoon, work the cubed butter into the flour mixture.
  • Add in the egg and milk. Mix the wet ingredients in.
  • Add in the chopped chives and grated cheese, and mix well to incorporate into the scone dough.
  • On a floured work surface, roll out the dough into a large circle, about 8-inches.
  • Cut the circle into 8 slices using a sharp knife and transfer onto a prepared baking sheet.
  • Lightly brush the tops of the scones with a bit of cream using a pastry brush.
  • Place the lined baking sheet right into the fridge and allow it to cool for up to 20 minutes if time allows.
  • Bake scones for about 20 minutes, or until edges start to turn golden brown.
