It is officially summer and we can finally start having a few friends over for a backyard gathering (following social distancing guidelines of course). It’s been hard not to have our friends over because we love good times, good friends and good food. What is also important to us is good quality and healthy ingredients…while supporting our local farmers. That is why I am so excited to partner up with Alberta Turkey and share this recipe for Shredded BBQ Turkey Lettuce Wraps. Slow-cooked Turkey smothered in homemade BBQ sauce is the perfect meal for an outdoor lunch or dinner.
I love using Turkey in recipes since it is so versatile and a healthier option. Turkey is a low-fat choice while still being a great source of protein, vitamin B6, B12 and Zinc…which are all very essential for your overall health.

INGREDIENTS:
Shredded Turkey

1 turkey breast, about 2-3 lbs

1 small onion, chopped into large pieces

1 tbsp of onion flakes or
-
1 tsp of ground cumin
-
1 tsp of smoked paprika
-
1 can of dark beer
Homemade BBQ Sauce
-
1 can of crushed tomatoes
-
1/2 cup of brown sugar
-
1/2 cup of applesauce
-
1/2 cup of apple cider vinegar
-
2 tbsp of Worcestershire sauce
-
2 tbsp of mustard powder
-
1 tbsp of smoked paprika
-
1 tsp of ground cumin
-
1 tsp of garlic powder
-
1 tsp of red chilli flakes
-
1/4 tsp of salt
For Serving
-
butter lettuce
-
coleslaw
-
slider or smaller burger buns
DIRECTIONS:

Season your turkey breast with onion flakes, cumin, paprika, salt and pepper on both sides.

Add your chopped onions to the bottom of your slow cooker. Add your seasoned turkey breast on top of the onions and pour your can of beer on top of your turkey.

Cook on high for 3-4 hours or on low for 5 hours.

Once done, use two forks to shred the cooked turkey. Transfer to a large bowl.

In a large saucepan mix tomatoes, brown sugar, applesauce, mustard powder, smoked paprika, Worcestershire sauce, cumin, garlic powder, chilli pepper flakes and salt. Stir all ingredients until well combined.

Heat on medium until it starts to bubble, then reduce on low heat and let simmer for at least 30 minutes. Stir regularly.

Once done, add as much BBQ sauce to your bowl of shredded turkey as you like. I usually go with 1 1/2 cups. Mix so that all of the turkey is covered in sauce.
To serve, pull apart the butter lettuce so that each piece is like a cup. Layer on your slaw and top with your BBQ shredded turkey. Sliders or small burger buns are also a great idea to have on hand. From there you can add whatever other toppings you would like. Great examples would be goat cheese, avocado or some shredded corn.
