This is my go-to weeknight chicken breast marinade. It is so easy and the best part is that it does not need to marinate for hours! A minimum of 30 minutes will do the trick…but if you can let it marinade longer then do it.

This marinade is Mediterranean-inspired and is so fresh tasting. We use lemon juice to flavour and tenderize the chicken and then we add Greek Yogurt which gives you the juiciest chicken breasts ever. You can bake this in the oven, but for this recipe, we grill them on the BBQ.

INGREDIENTS:

  • 4 chicken breasts

  • zest of 1/2 a lemon (about 1 tbsp)

  • juice of 2 lemons (keep lemons to add onto the grill)

  • 4 garlic cloves, minced

  • 1/3 cup of Greek Yogurt

  • 1/4 of olive oil

  • handful of fresh oregano (1 tbsp if using dried)

  • salt & pepper to taste

DIRECTIONS:

  1. In a large bowl add your chicken breasts, oil, lemon juice, lemon zest, minced garlic cloves, yogurt and oregano. Add a few pinches of salt as well as a few cracks of black pepper.

  2. With a spoon or spatula, toss so that your chicken is covered in the mixture and let marinate for at least 30 minutes. I usually leave it in for 2-3 hours max.

  3. Preheat your BBQ to about 500 F and place the chicken on the grill. Add some of the remaining marinades on top of each chicken breast and cook covered for about 5 minutes.

  4. Add the half lemons to the grill and cook for another 5 minutes.

  5. Turn the breasts over and place each half lemon (cut side down) on each of the chicken breasts. Continue to cook for another 10 minutes.

  6. Remove from BBQ and let cool for 2-3 minutes and then serve.

I like serving this dish family-style, on a serving plate or cutting board. Goes perfectly with any grilled vegetables, baby potatoes and/or a simple arugula salad!
