Asparagus is the perfect side to any of your BBQ dishes this summer. This recipe is so quick when cooked on the BBQ, but can easily be done in the oven (even in a toaster oven).
This asparagus dish is boasting with flavours, thanks to the lemon juice and zest…but also has a bit of heat from the red pepper flakes. The addition of the breadcrumbs adds some texture, and the sprinkle of cheese on top just makes it so perfect.
INGREDIENTS:

asparagus
-
2 tbsp of good quality olive oil

1 lemon
-
2 tbsp of breadcrumbs
-
2 tbsp of parmesan cheese
-
1/2 tsp of red pepper flakes
-
1/4 tsp of fresh ground black pepper
-
1 pinch of salt
DIRECTIONS:

Preheat your oven using the broil setting or fire up your BBQ to medium heat and let warm up to about 300°F.

Line a baking sheet with parchment paper or a reusable baking sheet. If cooking in the BBQ, you can also use a baking sheet or one of those reusable BBQ mats.

Snap off the tough ends of the asparagus and discard.

Place the asparagus onto the baking sheet and add the oil. Use your hands to make sure they are well coated.

Spread out the asparagus on the baking sheet so that they are not overlapping.

Using a fine grater, top with the parmesan cheese as well as the zest of half of a lemon.

Using that same half lemon, squeeze the juices out on top of the asparagus.

Garnish with breadcrumbs, red pepper flakes, salt and pepper.

Broil for 5 minutes or grill on the BBQ for about 10…just until ends get crispy.
