This Chive and Cheddar Quick Bread is a foolproof option that pairs beautifully with your main dishes or a simple vegetable soup. I also love to enjoy a slice in the morning with my cup of coffee! I simply just warm it up in the toaster oven, and voila!

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 3 eggs (room temperature)
  • ½ cup milk
  • ¼ cup vegetable or canola oil
  • 1 1/2 cups grated cheddar cheese, or try parmesan cheese or pepper jack for a different sharp flavour
  • ½ cup chives, finely chopped. Can substitute with green onion

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a bread pan and set aside.
  2. In a large mixing bowl, sift together the measured flour, baking powder, garlic powder, onion powder, salt, and pepper.
  3. In a separate bowl, whisk the eggs, milk, and oil until well combined.
  4. Stir in the grated cheese and chopped chives into the dry mixture.
  5. Pour the wet mixture into the dry mixture and fold gently until just combined. Avoid overmixing to prevent dense bread.
  6. Transfer the batter to the prepared loaf pan. Bake for 45-50 minutes, or until the top is golden brown and a toothpick inserted comes out with moist crumbs.
  7. Let the bread cool in the pan on a wire rack for 10 minutes before removing to cool completely.
