Another easy and delicious apple recipe for you! If you saw one of the previous posts, you know I have an abundance of crabapples this year. So many that I need to be creative and come up with new recipes (instead of making apple jellies as I would normally do).
I decided to whip up these potato, apple and onion pancakes. They turned out incredible! It was actually quite easy to do, and it will be a brunch staple over the next few weeks until I run out of crabapples.
I even created an easy yogurt and garlic sauce to add on top. It was the perfect addition. The recipe for that is at the bottom of this page.
INGREDIENTS:

1 large potato

4-5 crabapples, depending on size (or 2 full-sized apples of your choice)

1/2 onion, chopped

2 eggs

2 tbsp of flour

1 tsp of salt

1 tbsp of olive oil
DIRECTIONS:

Using a cheese grater, grate your potatoes into a bowl. Add the grated potatoes into a cheesecloth and try to squeeze out as much of the water as possible. Return to mixing bowl.

Again using your grater, grate the apples and add with the potatoes.

Finely chop your onions and add to your mixing bowl.

Add in the eggs, salt, flour and mix until all ingredients are well combined.

In a large pan over medium heat, add a drizzle of olive oil.

Drop-in a spoonful at a time of your batter and flatten.

Fry on each side until golden brown.

Place on paper towels to absorb the excess oil and serve while still hot.
To make a quick garlic yogurt sauce; combine 1/2 cup of yogurt, juice of half a lemon, two grated garlic cloves, 1 tablespoon of honey, salt and pepper to taste. Mix well and serve.
