I don’t regularly buy pineapple and after a recent food branding shoot for a client, I was left scratching my head wondering what to do with this beautiful pineapple. I’ve grilled it previously (check out this Rum Soaked Grilled Pineapple) but wanted to try a baked dessert. I kept thinking pineapple, apple…apple crisp….pineapple crisp. And voila.
This Pineapple Crisp was as easy as peeling and chopping up a pineapple and using my classic apple crisp topping. It was pure MAGIC.
Eat it right out of the oven, topped with ice cream or even a spoonful of it on top of ice cream. It’s even just as amazing once it cools off to room temperature.
INGREDIENTS:

1 pineapple, chopped into bite-sized cubes

1/2 cup of brown sugar

1 tbsp of cornstarch

1/2 cup of butter

1/2 cup of flour

1 cup of Instant Rolled Oats
DIRECTIONS:

Preheat oven to 350 degrees F.

Once your pineapple is chopped, add to a baking dish and sprinkle with cornstarch and 1 tbsp of brown sugar. Mix until the starch is no longer visible.

In a mixing bowl, add the remainder of the brown sugar, butter, oats, flour and mix until well combined.

Crumble the topping over the pineapple mixture.

Bake for 40-45 minutes until the top starts to turn golden.
Serve warm out of the oven or let cool to room temperature before serving.
