This is one of the easiest pasta salad recipes and only requires a handful of fresh ingredients. This makes for a perfect side salad or even a simple lunch option.

This is a fantastic dish to bring for a BBQ or summer picnic since it makes quite a few servings. You can even add in some sliced chicken breast for some protein.


The creaminess of this pasta salad is all from the goat cheese. With a little olive oil and lemon juice, it brightens up the flavour.

If you want to add a little kick to it, a small pinch of red pepper flakes will do the trick.

INGREDIENTS:

  • 3 cups of cooked pasta

  • 150 g of goat cheese

  • 2 tbsp of olive oil

  • 2 tbsp of lemon juice

  • 1/2 tsp of salt

  • 1/2 tsp of pepper

  • 2 cups of arugula

  • 2 cups of cherry tomatoes, sliced or halved depending on the size

DIRECTIONS:

  1. Cook your pasta to package directions for al dente. Set aside until cool.

  2. Once cooled; add in the olive oil, lemon juice, salt & pepper. Toss to combine.

  3. Add in the goat cheese and stir until all the pasta is evenly coated in the cheese mixture.

  4. Toss in the cherry tomatoes and arugula, toss and serve.
