Summer is right around the corner, so it’s time to enjoy some bright salads, just like this one. This Orange, Feta & Arugula Salad is the perfect side to all your favourite summer dishes. You’ll be a superstar if you bring this to the next potluck BBQ. This salad can even be a main, just add a sliced chicken breast!
INGREDIENTS:

handful of arugula

1 cup of crumbled feta cheese

1 orange

2 tbsp of olive oil

1 tbsp of honey

juice of 1 lemon

salt & pepper
DIRECTIONS:

In a large mixing bowl, whisk together the olive oil, honey, juice of 1 lemon, a pinch of salt and pepper. Set aside.

Peel or slice off the skin of your orange, trying to remove as much of the pith as possible. Once peeled, slice your orange into wheels. If you have a large orange, slice the wheels in half.

Roughly chop your fresh herbs and along with the arugula, add into the large mixing bowl (with the vinaigrette at the bottom). Toss to combine. Make sure all of the leaves get covered in the vinaigrette.

Add the greens to a serving plate and sprinkle some feta cheese and top with a few slices of orange and serve.
