This Cucumber and Mint Spritz is the perfect cocktail for those hot summer afternoons. The cucumber and mint work so well together for this delicious and refreshing drink.
To make this cocktail extra boozy, I added some Vodka. You can skip out on the Vodka if you want since it will still be as flavourful just with some bubbly.
INGREDIENTS:

1-inch piece of cucumber, peeled

juice of 1/2 of a lime

1 oz of Vodka

A handful of fresh Mint (reserve some for garnish)

Prosecco, or any other sparkling wine of your choice
DIRECTIONS:

In a cocktail shaker; add the piece of cucumber, lime juice, Vodka and mint. Muddle so that all the juices from the cucumber are released.

Add a handful of ice into the cocktail shaker and give it a good shake.

Strain into a cocktail glass, top with Prosecco.
