If you are looking for the perfect fresh summer appetizer, well look no further. It does not get more fresh than this. Tomatoes are gorgeous right now, and what better way to celebrate their wonderful flavours by making them the star of this dish. These tomatoes sit on a bed of whipped ricotta which just makes it so decadent. It just compliments the freshness of the other ingredients.
It’s so easy to prepare and will wow your guest since it is a beautiful presentation. It makes it the perfect sharing dish at your next potluck or BBQ.
INGREDIENTS:

2 cups of ricotta cheese

2 cups of cherry tomatoes

juice of 1/2 lemon

1 1/2 tbsp of olive oil

1/4 cup of fresh basil

salt and pepper to taste

pinch of flaked salt or finishing salt
DIRECTIONS:

In the bowl of a stand mixer, add the ricotta cheese, juice of half a lemon, 1 tbsp of olive oil, a generous amount of salt. If you don’t have a stand mixer, a whisk will do the job!

Mix for about 1-2 minutes until cheese becomes smooth and fluffy.

Slice your tomatoes in half or quarters depending on the size.

On a serving plate, spread the whipped ricotta on the bottom. Drizzle with the rest of the olive oil.

Place the tomatoes on top of the ricotta mixture and garnish with the fresh basil.

Season lightly with a pinch of finishing salt or fleur de sel.
