This is probably the easiest appetizer ever, and it’s so delicious. We’ve been hosting a lot of backyard dinners and picnics these past few weeks in the backyard, so it’s nice to find quick and simple dishes to serve our friends.

Growing up in Quebec, baked brie was always a staple during the Holidays. It was always my favourite since I love cheese too much. Seriously, it’s like a problem. I could live off it.

It’s a dish that I still find very comforting and wanted to make it more often, and not necessarily only during the Holidays. For a summer twist, I decided to add some fresh strawberries since I picked up some gorgeous ones from the farmer market the other day. A little balsamic drizzle and fresh basil just complete the flavour and make it the perfect addition to any dinner or picnic.

INGREDIENTS:

  • 1 wheel of Brie

  • 1 cup of strawberries, sliced

  • 1 tbsp of maple syrup

  • a few pieces of fresh Basil

  • balsamic reduction (recipe at the bottom of this post)

DIRECTIONS:

  1. Preheat your oven to 350 C and place a piece of parchment paper or reusable baking mat on a baking sheet. Place the brie wheel in the centre on the parchment paper.

  2. In a small oven-safe dish, add your strawberries and maple syrup. Mix well.

  3. Place the dish with the berries on the baking sheet with the brie and add it into the oven. Bake for 15 minutes.

  4. Remove from oven and let cool for 5 minutes. You don’t want to touch it yet since the inside is melted and will come oozing out.

  5. Once slightly cooled, transfer to a serving dish. Add the roasted strawberries on top.

  6. Chop up a few pieces of fresh basil and sprinkle on top of the strawberries.

  7. Drizzle with the balsamic reduction and serve with crackers, toasted bread or crostini.
