Sometimes I just want to throw together a quick, easy recipe for lunch, and this tomato toast is a perfect example. This delicious toast is perfect for an easy snack or light lunch with a side salad. What you need for this simple recipe…

1-2 slices of bread, like fresh Italian bread

1/2 tbsp of Dijon mustard

A few slices of aged cheese; like aged cheddar or gruyère

1/2 cup of cherry tomatoes, halved

1 teaspoon of salt

black pepper

drizzle of extra virgin olive oil
Optional: Add some fresh basil leaves for garnish. You can also rub a slice of fresh garlic on the bread before toasting for a touch of garlic flavor.
Directions

Using the broiler of your oven or toaster oven, broil one side of the bread slice for a couple of minutes. Until golden brown.

On the untoasted side, spread some of the Dijon mustard and layer on some cheese.

Return under the broiler on a baking sheet until the cheese is melted and bubbling.

Once out of the oven, top with the halved tomatoes or tomato slices and top with a pinch of sea salt and some black pepper.

Drizzle a little olive oil on top and serve immediately.
FAQ’s and variations…

I love this recipe is salty cheddar cheese, but you can also use cream cheese, fresh mozzarella, creamy goat cheese.

Don’t have cherry tomatoes on hard…use heirloom tomatoes or any variety of fresh tomatoes. Just do that same with the tomato slices as you would with cherry tomatoes in step 4.
