This Easy Cucumber, Feta and Black Bean Salad recipe is a staple recipe heading into the warm summer months. It’s a wonderful way to use fresh ingredients like crisp cucumbers, red peppers, and black beans. It’s the perfect cold salad that is packed with protein, which makes the perfect lunch, a great side dish, and one of my favorite vegetarian recipes.

What you’ll need to make this easy black bean salad…
- 1 can of black beans, drained and rinsed
- 1 cucumber, chopped
- 1/2 red onion, thinly sliced
- 1 red bell pepper, diced
- 1/2 cup of feta cheese, but add more to your taste. I love feta so I won’t stop you…
- lime wedges, for garnish
Ingredients for the zesty lime dressing…
- 2 tbsp of extra virgin olive oil
- 2 tbsp of fresh lime juice
- 1/2 tsp ground cumin
- 1/8 tsp of garlic powder
- 1/8 tsp of onion powder
- 1/4 tsp salt
- fresh pepper, to taste
Let’s make this Easy Black Bean, Cucumber, and Feta Salad…
- Start by rinsing and draining the black beans under cold water. Add the beans to a large bowl.
- To the large bowl, add the chopped cucumber, sliced onion, diced red pepper, and crumbled feta cheese.
- In a small bowl, combine the olive oil, lime juice, cumin, garlic and onion powder, teaspoon salt and pepper. Whisk to combine.
- Pour the lime dressing into the large bowl and mix to get everything well mixed.
For best results, allow to chill in the fridge at least 30 minutes before serving. This will allow the flavors to marinate together.
FAQ’s & Variations
I love serving this salad with a side of tortilla chips or even serve on top of some white rice for a healthy bowl meal.
No! You can use yellow pepper or even green bell pepper. You can replace the pepper with corn too. It’s the perfect alternative to still get that crunch! You can even char the corn to enhance the flavor. Just grill it long enough to get some nice grill marks.
You can add some fresh corn, fresh cilantro or basil, spring onions, and a little extra lime zest for an additional garnish!
Keep refrigerated in an airtight container for up to 4 days. This salad is also perfect to be made the day before!
