This salad dressing is a bright and flavourful dressing that is perfect for your summer salads. It’s light, fresh and so creamy. This recipe makes enough to save some for a salad or two later in the week. The dressing can be kept for up to 5 days refrigerated in a jar.

This dressing would go perfectly with some greens, cucumber and a handful of chopped mint.

INGREDIENTS:

  • 1/2 cup of plain greek yogurt

  • juice of 1/2 a lemon

  • 3 tbsp of extra virgin olive oil

  • 1 tbsp of white wine vinegar

  • 1 tbsp of sugar

  • 2 garlic cloves, minced

  • 1/2 tsp of salt

  • 1/2 tsp of pepper

DIRECTIONS:

It’s as easy as mixing all of these ingredients in a small bowl until everything is well combined.
