This recipe is the perfect weeknight dinner option since it all comes together in less than 20 minutes. The best part is that it only uses a handful of simple and inexpensive ingredients. This dish also makes for the best leftovers! I love bringing it to work for a healthy lunch option.

I decided to pair this dish with this Similkameen Rose from City & Country Wine. The fruits and sweetness played perfectly with this dish. I love this wine with bold dishes since each sip picks up on notes of pineapple, cherries, strawberries and pink grapefruit.


Now that I look back at my previous posts, it kinda looks like I am obsessed with chickpeas…I use them all the time. I promise that I’ll venture to other beans soon. I promise…

Most of the ingredients required here are simple pantry staples, so you don’t need to worry about getting a bunch of fresh ingredients. I like my curry with rice, but you can use any side dish of your preference.


INGREDIENTS:

  • 1 tbsp of olive oil

  • 1/2 of a white or yellow onion, diced

  • 1 yellow pepper, chopped

  • 4 cloves of garlic, minced

  • 2 tbsp of dried basil

  • 1 tbsp of curry powder

  • 1 can of chickpeas, drained and rinsed

  • 1 can of coconut milk

  • 2 limes

  • salt & pepper to taste

  • fresh basil (optional)

  • Naan bread (optional)

  • White rice (optional)

DIRECTIONS:

  • In a large skillet, add your oil and bring up to medium heat. Add your onions and peppers. Cook for 5 minutes then add the garlic. Cook for an additional 3 minutes.

  • Add your dried basil, curry powder, a pinch of salt and a few crack of fresh ground pepper. Stir to combine.

  • Cook for 2-3 more minutes until fragrant.

  • Add in your coconut milk and juice of 1 lime. Mix to combine and bring to a gentle simmer.

  • Add in chickpeas, stir and simmer for about 5 minutes.

  • Serve on rice or noodles with a side of naan, lime wedges, garnish with fresh basil and enjoy!

If ever your curry mixture is too thick, add in 1 tbsp of water to loosen it up. Especially when reheating, a little water will bring it back to life.
