Why I Love this Recipe

Last summer, I hosted a backyard barbecue for friends and family. It was one of those scorching hot days, and I wanted to serve a dessert that was both refreshing and impressive. That’s when I thought of combining my favorite mojito flavors with blueberries to create a popsicle. The result was a hit, and everyone loved the blend of creamy yogurt, tangy lime, and fresh blueberries. Since then, these popsicles have become a staple in my summer recipe repertoire, and I’m thrilled to share them with you.

Blueberry Mojito Popsicle Ingredients

For the Blueberry Lime Compote:

  • 2 cups fresh blueberries
  • 1/3 cup water
  • 1/3 cup sugar
  • Juice of 2 limes
  • 2 tablespoons chopped fresh mint leaves

For the Yogurt Mixture:

  • 1 1/2 cups Greek yogurt
  • Zest of 1 lime
  • 5 tablespoons rum

Additional Equipment

  • Popsicle molds
  • Popsicle sticks

How to Make these Delicious Blueberry Mojito Popsicles

Step 1: Make the Blueberry Lime Compote

  1. In a medium saucepan, combine blueberries, water, sugar, lime juice, and chopped mint.
  2. Cook over medium heat for about 10 minutes, until the blueberries burst and the mixture thickens. Stir occasionally.
  3. Allow the compote to cool completely.

Step 2: Prepare the Yogurt Mixture

  1. In a large bowl, mix Greek yogurt, lime zest, and rum until well combined.

Step 3: Assemble the Popsicles

  1. Spoon two tablespoons of the blueberry compote into each popsicle mold.
  2. Fill the molds with the yogurt mixture.
  3. Use a spoon to gently swirl the yogurt and blueberry compote together for a marbled effect.
  4. Insert popsicle sticks into the molds.

Step 4: Freeze and Serve

  1. Freeze the popsicles for at least 4 hours, or until solid.
  2. To easily remove the popsicles from the molds, run the outside of the molds under warm water for a few seconds before pulling out the popsicles.

Tips and Variations

  • Storage: Store the popsicles in an airtight container or resealable freezer bag, separated by parchment paper, to prevent sticking. They are best enjoyed within 1-2 weeks​​.
  • Sweeteners: Feel free to substitute honey for sugar in the compote if you prefer a natural sweetener​.
  • Alcohol-Free Option: For a kid-friendly version, omit the rum and replace with additional lime juice or water​.
