Today I’m sharing a new buttery scone recipe, in collaboration with Schneiders Bacon. Today’s recipe is for these Bacon, Cheddar, and Chive Scones. I love savory scones, and the addition of the smoky bacon makes for the best scones. The base of this recipe is so simple to make, all you need is a few staple pantry ingredients.

Why you’ll love these tender bacon cheddar scones…

The crispy bacon pairs perfectly with the savory biscuit dough, and the added chives and sharp cheddar make for the best well-rounded savory scone.

If you are like me, you sometimes get tired of normal sugary breakfast treats. These large scones are the perfect addition to your breakfast or brunch menu. I also love to have scones for a quick and simple lunch. A warm scone with a simple side salad, it’s perfect!

What I love about making scones is that you don’t need any fancy equipment, like a stand mixer or even a hand mixer. All you need is a large bowl, along with a wooden spoon to mix. To be honest, I usually use my hands to mix the dough since it’s way easier and you can really make sure that all of the ingredients are perfectly combined.

This recipe is customizable too! The first time I made this recipe, I only used 1/2 cup of cheese. My taste testers liked it but wanted more cheese. So I doubled the quantity and having a whole lot of cheddar cheese just added so much flavor. But that being said, if you are not a fan of cheddar, you can use Havarti, Gouda, or even Parmesan.

What you’ll need to make this delicious savory scone recipe…

  • 2 + 3/4 cups of all purpose flour
  • 2 tsp of baking powder
  • 1/3 cup of sugar
  • 1/2 teaspoon of salt
  • 1/2 tsp of baking soda
  • 4 oz of cold butter, cut into small cubes
  • 1 egg, at room temperature
  • 2 tbsp of heavy cream
  • 1/2 cup of milk
  • 1 cup of cooked bacon, roughly chopped into larger pieces
  • 1 cup of grated sharp cheddar cheese
  • a handful of fresh chives, chopped

How to make these Bacon, Cheddar & Chives Scones…

  1. Start by preheating your oven to 400 F and line a baking sheet with parchment paper, wax paper or use a baking mat.
  2. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, salt, and sugar. Mix to combine the dry mixture.
  3. Cut your butter into small chunks and then using your hands or wooden spoon, work the cubed butter into the flour mixture.
  4. Add in the egg and milk. Mix the wet ingredients in.
  5. Add in the chopped chives and grated cheese, and mix well to incorporate into the scone dough.
  6. On a floured work surface, roll out the dough into a large circle, about 8-inches. Use your hands to shape and pat dough, or you can also use a rolling pin.
  7. Cut the circle into 8 slices using a sharp knife and transfer onto a prepared baking sheet.
  8. Before placing them into the oven, lightly brush the tops of the scones with a bit of cream using a pastry brush.
  9. Place the lined baking sheet right into the fridge and allow it to cool for up to 20 minutes if time allows. This will help bake flakey scones, but if pressed on time…this step can be skipped.
  10. Bake scones for about 20 minutes, or until edges start to turn golden brown. If your scones are on the thicker side, they might need an additional 3-4 minutes.
  11. Let cool slightly before serving. Store in an airtight container for up to 4 days.

To reheat your scones, pop them in the toaster oven for a few minutes!

Scones also freeze very well. Keep frozen for up to two months in a freezer bag!

FAQ’s & Variations…

  • Don’t have or like chives? Green onions work just as well. Just chop up the green parts of 3 green onions!
  • This recipe can also be made dairy-free, simply swap out the milk for almond, oat, or any other plant-based or dairy-free mink. As for the cream, replace it with an egg wash.
  • As for cooking the bacon, I love using my air-fryer…but you can cook your bacon whichever way you prefer. From oven to a frying pan, anyway will work!
