These Chewy Apple & Salted Caramel Cookies are probably my favourite Fall cookie recipes. I’ve been making these chewy cookies for a few years now, and I’m obsessed with its Fall flavors. Inspired by caramel apples, these staled caramel apple cookies are seriously delicious magic.

I was so happy to see the Salted Caramel Chocolate Chips back at the grocery store! I only seem to find them in the Fall as a limited edition (which I guess makes sense) so I stocked up this time! If you can’t seem to find caramel chips at the supermarket, white chocolate chips will be just as delicious! 

Why you’ll love these Sweet Salted Caramel Apple Cookies…

  • These irresistible cookies only require a few basic ingredients. The base of this cookie is mainly melted butter, brown sugar, an egg, vanilla, flour and baking soda! That’s it. You can use this base to soft and chewy chocolate chip cookies too! Throw in fresh apple and caramel, it’s perfection. 
  • The chunks of apple and the salted caramel work so perfectly together! I mean, is there a better Fall combination than apple caramel?
  • You can turn these chewy cookies into ice cream sandwiches! Oh yes, just add a scoop of vanilla ice cream and press between two big cookies! 
  • You can make this cookie batter in advance! If you want to enjoy just-baked cookies at any time, you can prepare the cookie dough in advance and store it in the fridge for 3-5 days or freeze the dough in an air-tight container for up to three months. When ready to bake, place refrigerated cookie dough (or frozen) on the counter and allow it to come to room temperature. Shape the cookies and bake! 
  • You can use any variety of apples you have on hand! I used granny smith apples for this recipe…but I’ve even made it with crab apples which gave it yummy tart apple bits!

What you’ll need to make these soft cookies with chunks of apple…

  • 1 cup of diced apples, about one large apple

  • 1 cup of salted caramel chocolate chips, or caramel bits

  • 1 cup of brown sugar, or light golden brown sugar

  • 1/2 cup of butter, melted

  • 1 tsp of vanilla
  • 1 1/2 cup of all-purpose or whole wheat flour

  • 1 egg, at room temperature

  • 1/2 tsp of sea salt

  • 1/2 tsp of baking soda

  • 1/2 tsp of ground cinnamon (optional)

How to make these Soft Apple and Salted Caramel Cookies…

makes 12 cookies

  1. Preheat your oven to 350 degrees F and prepare your baking sheet. I love using a baking mat for the perfect cookies, but also a quicker clean-up. You can also line your baking pan with parchment paper or grease cookie sheet.
  2. Using an electric mixer or stand mixer; combine the brown sugar, egg and melted butter in a large mixing bowl. Mix on medium speed with the paddle attachment until smooth.

  3. Gradually add in the dry ingredients: flour, salt and baking soda. Mix in the flour mixture on low speed until well combined.

  4. Fold in chocolate chips and chopped apples using a sturdy rubber spatula.

  5. Place cookie dough onto the cookies sheet using a tablespoon (or ice cream scoop), leaving 2 inches between each.

  6. Bake for about 15 minutes, until it turns a golden caramel color or until the center of each cookie is slightly firm.

  7. Let cool slightly on a wire rack before digging in.
