I always love incorporating their tender chicken in weeknight recipes for an easy meal. This great recipe uses leftover rotisserie chicken to make a delicious wrap, which is a take on a Greek chicken pita recipe.

This delicious recipe takes the shredded chicken to the next level, simply adding a few ingredients that bring in some Mediterranean flavours. The pita wrap is loaded with fresh veggies, marinated chicken and fresh herbs. You can use a traditional tzatziki recipe if you wish, or you can try the easy Lemon and Dill Yogurt Sauce included below.
What you’ll need to make this Greek Chicken Pita Recipe…
- 3 cups of shredded Costco Rotisserie Chicken
- 1 tbsp of extra-virgin olive oil
- 3 garlic cloves, minced
- 1 medium onion (half chopped, and half thinly sliced)
- 1 tsp of dried oregano
- 1 tsp of smoked paprika
- 1 tbsp of balsamic vinegar
- 1 tbsp of honey
- 1/4 cup of chicken broth
- salt and black pepper, to taste
- warm pita bread
- cherry tomatoes, quartered
- shredded lettuce
- cucumber, diced
For the Lemon & Dill Yogurt Sauce
- 1 cup of plain Greek Yogurt
- 1 tbsp of lemon zest
- juice from 1/2 a lemon
- 1/4 cup of fresh dill, finely chopped
- salt and pepper, to taste
How to make the easy marinated chicken…
- Shred your leftover rotisserie chicken and set it aside in a large bowl.
- On medium heat, add one tablespoon of olive oil, 1/2 of your chopped onion and minced garlic. Cook for 3-4 minutes until soft.
- Add your shredded chicken to the onion mixture, dried oregano, smoked paprika, juice from 1/2 a lemon, balsamic vinegar, honey and 1/4 cup of chicken broth. Stir to get everything well combined and allow to cook for about 10 minutes, just until the sauce thickens and the chicken gets a crispy texture.
How to make the Lemon Dill Yogurt Sauce…
- In a small bowl, add one cup of plain Greek Yogurt, fresh dill, salt & pepper, lemon zest and a squeeze of lemon juice. The juice from 1/2 a lemon is perfect!
- Stir yogurt mixture until well combined.
How to assemble the Greek Chicken Pitas…
- Place your wrap pita on a place and layer in some shredded lettuce, diced cucumber, sliced cherry tomatoes, and sliced onion.
- Spoon chicken mixture on top and drizzle some of the yogurt sauce.
- Roll up the pita and serve!
