I am so excited to present this recipe and wine pairing in collaboration with City & Country Winery, Calgary’s first urban winery. This is the first of a few recipes that will be paired with their fabulous wines. They are the first urban winery in Calgary (Alberta, Canada) that makes wines using grapes from all over the world, yet made right here in Calgary.

They have a beautiful tasting room right in Calgary where you can try wine by the glass, or even have a wine flight and try 6 of their bottles. It was such a fun experience to visit the winery and it’s been even more fun coming up with delicious recipes that pair well with their wines.


This week I am sharing a recipe for the perfect starter to have us reminisce those summer days. I paired it with the California White from City & Country. This wine is sunshine in a bottle. It’s crisp and refreshing, with notes of flower blossoms and tropical fruits on the nose. It’s a blend of Chardonnay, Sauvignon Blanc, Pinot Gris & Chenin Blanc.

We still have a few more weeks to grab some of those B.C cherry tomatoes before they are officially out of season. This is the perfect way to brighten up a November evening.

INGREDIENTS:

  • 1 block of feta (at least 8 oz)

  • 1 cup of cherry tomatoes, halved

  • 2 cloves of garlic, minced

  • 1/2 cup of sliced red onion

  • 2 tbsp of olive oil

  • 1 tsp of dried basil

  • 1 tsp of dried oregano

  • fresh bread, naan or crackers for serving

DIRECTIONS:

  1. Preheat oven to 400 degrees F.

  2. In a large bowl, mix the tomatoes, onions, minced garlic, dried basil and oregano plus olive oil. Mix to get all the ingredients combined.

  3. In a baking dish or cast iron pan, add your block of feta in the middle.

  4. Pile the tomato mixture on top.

  5. Bake for 15-20 minutes, or until tomatoes are roasted and edges of the onion start to brown.

  6. Remove from oven and serve warm.

Keep in mind the feta will not fully melt, it will just soften and spread easily. Serve with crackers or bread of your choice.
