This barley salad is perfect for meal prep, potlucks or a quick healthy lunch idea. Ingredients1 cup pearl barley3–4 asparagus spears, chopped1 cup of chickpeas, drained and rinsed4 green onions, sliced½ cup feta cheese, crumbledOptional: cherry tomatoes, bell peppers, cucumbers, arugulaCreamy Lemon Salad Dressing (DM me for the recipe)Instructions1. Cook barley in salted water for 25–30 mins, drain, and rinse.2. Chop the asparagus and green onions. You can also steam or sauté asparagus if you want.3. In a large bowl, combine cooked barley, chickpeas, vegetables, and green onions.4. Prep the salad dressing. 5. Add dressing and toss to combine.
