It’s a guaranteed crowd-pleaser that feels just a little fancy.If you’ve been looking for an excuse to break out your bundt pan, this is it. Serve it at your next brunch, dinner party, or just as a sweet weekend treat. You deserve it ❤️.Find my tips for making this recipe, as well as substitutions and variations on my website.IngredientsFor the Cake2 cups granulated sugar4 large eggs1 cup canola or vegetable oil1 tbsp vanilla extract3 cups all-purpose flour2 tsp baking soda1 tsp salt1 tbsp orange zest3 cups grated carrotsFor the Orange Cream Cheese Glaze2 tbsp cream cheese, softened¾ cup powdered sugar1 tbsp fresh orange juiceInstructions1. Preheat oven to 350ºF. Grease and flour a 10- or 12-cup bundt pan.2. In a large bowl, whisk together sugar, eggs, oil, and vanilla until smooth.3. In a separate bowl, combine flour, baking soda, salt, and orange zest.4. Add dry ingredients to wet ingredients and mix until just combined.5. Fold in grated carrots.6. Pour batter into the bundt pan and smooth the top.7. Bake for 45–55 minutes or until a toothpick comes out clean.8. Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.8. For the glaze: whisk cream cheese, powdered sugar, and orange juice until smooth.
