This is my go-to salad vinaigrette, and it’s perfect for now since we are all ready for those bright and fresh flavours.

This Lemon Basil Vinaigrette is so light, fresh and is not only perfect for salads… but also a great marinade for your grilled goodies. I’m talking about chicken, shrimp, steak and pork…anything you want.

I love using fresh basil in here since it just adds so much flavour. Now that it’s Spring, I suggest your grab a basil plant from the supermarket or local plant store and use it all summer long. Growing basil can be a pain, but this is the easiest season to keep it growing!

To this vinaigrette; I’ve added fresh lemon juice, garlic, Dijon mustard and some honey for a hint of sweetness. All of these ingredients together create this easy and delicious dressing.

INGREDIENTS:

  • 1/4 cup of olive oil

  • 1/4 cup of fresh lemon juice (about 1 large lemon)

  • 4 large basil leaves, finely chopped

  • 1 garlic clove, chopped or minced

  • 1/2 tsp of Dijon mustard

  • 1/2 tsp of honey

  • salt

  • pepper or lemon pepper to taste

DIRECTIONS:

  1. Add all of the ingredients to a small mixing bowl or jar.

  2. Whisk the ingredients together or add the lid on the jar and shake until all ingredients are well combined.

This vinaigrette will stay fresh for 3-4 days in the refrigerator.
