What you’ll need to make these Honey Granola Clusters…

  • 3 cups of quick oats
  • 1 cup of pumpkin seeds
  • 1 cup of sunflower seeds
  • 1 cup of whole almonds
  • 1/4 cup of chopped pecans
  • 1 cup of shredded coconut, or coconut flakes
  • 1/4 cup of brown sugar, or coconut sugar
  • 1/2 cup of butter
  • 1/3 cup of honey
  • 1 tbsp of vanilla extract
  • pinch of salt

How to make these Crunchy Homemade Granola Clusters…

  1. Preheat your oven to 350 degrees F. Line a large baking sheet with parchment paper or use a baking mat.
  2. In a large mixing bowl combine oats and the other dry ingredients. Add rolled oats, pumpkin seeds, sunflower seeds, whole almonds, chopped pecans, and shredded coconut to your large bowl. Mix until all the ingredients are well combined.
  3. in a medium saucepan on low heat, add butter, brown sugar, honey, a pinch of salt and vanilla. Stir until butter is melted and sugar is dissolved.
  4. Add the wet ingredients to the oat mixture and stir until the granola mixture is well mixed.
  5. Spread the mixture in an even layer on your lined baking sheet.
  6. Bake for 15 minutes or until oats become toasted and slightly golden brown.
  7. Allow the sheet pan to come to room temperature once out of the oven.
  8. Break into large clusters and store in an airtight container, just like Bernardin jars!
