@may.eighty.five | Tomato confit is the perfect way to use up those end-of-summer tomatoes. Sweet cherry tomatoes and garlic are slowly roasted with some herbs until jammy, sweet and sticky. I love to use this on ANYTHING! On toast (with some ricotta is my favourite), pasta, sandwiches, pizza, on whipped feta or on top of your favourite protein. I even love to add a little to store-bought pasta sauces to really take them to the next level. AND THE BEST PART has to be the infused oil to use after for cooking, in salad salad dressings and so much more!
