Ingredients1 cup pearl barley3–4 asparagus spears, chopped1 cup of chickpeas, drained and rinsed4 green onions, sliced½ cup feta cheese, crumbledOptional: cherry tomatoes, bell peppers, cucumbers, arugulaCreamy Lemon Salad Dressing (DM me for the recipe)Instructions1. Cook barley in salted water for 25–30 mins, drain, and rinse.2. Chop the asparagus and green onions. You can also steam or sauté asparagus if you want.3.
